Ham and Cheese Muffin Recipe

Especially yummy straight out of the oven.

These muffins are very moreish, I find making one batch is never enough. They are perfect for morning or afternoon teas and store well in the fridge. You can substitute the ham for frozen corn kernels and capsicum for a vegetarian option.

2 C grated cheese
1 C self raising flour
1/2 c wholemeal self raising flour
4 slices of ham- diced
1 egg beaten
1 C milk

Preheat the oven to 200 degrees, mix the cheese, flours and ham in a large bowl. In a separate bowl mix the egg and milk and add it to the dry mix and fold gently. Spoon into a greased muffin tray and bake for 12 minutes.

Makes 12 muffins.
